  • 4 boneless, skinless chicken breasts pounded to even thickness
  • 8 slices bacon crispy
  • 1 cup Monterey Jack cheese shredded
  • 1 cup cheddar cheese shredded
  • 1 cup mushrooms sliced (optional)

Honey Mustard Sauce

  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • 1/4 cup mayonnaise
  • 2 tbsp olive oil for marinating and cooking
  • salt and pepper to taste

Instructions
 

  • In a mixing bowl, whisk together honey, Dijon mustard, and mayonnaise to create the honey mustard sauce. Set aside.
  • Place the chicken breasts in a dish and coat with half of the honey mustard sauce. Cover and marinate in the refrigerator for at least 2 hours (or overnight for deeper flavor).
  • Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and discard excess sauce.
  • Cook the chicken for about 5-7 minutes per side, until fully cooked and juices run clear. Remove from heat and place on a baking sheet.
  • Preheat the oven to 375°F (190°C).
  • Top each chicken breast with 2 slices of crispy bacon, then evenly distribute the shredded Monterey Jack and cheddar cheese on top.
  • Bake in the oven for 5-7 minutes, or until the cheese is melted and bubbly.
  • Remove from oven and drizzle with the remaining honey mustard sauce before serving.
  • Serve hot with a side of seasoned fries, garlic mashed potatoes, or steamed vegetables.
