Ingredients
  

Cajun Shrimp Pasta

  • 8 oz fettuccine or penne pasta
  • 1 lb shrimp peeled and deveined
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 1 bell pepper sliced (optional)
  • 2 cups fresh spinach optional
  • Salt and pepper to taste

Instructions
 

  • Cook pasta in a large pot of salted water according to package instructions. Drain and set aside.
  • Toss shrimp with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook 2–3 minutes per side until pink. Remove and set aside.
  • In the same skillet, add garlic (and bell peppers if using). Sauté for 1–2 minutes. Pour in heavy cream and bring to a simmer.
  • Stir in Parmesan cheese until melted. Season with salt and pepper. Add spinach and cook until wilted.
  • Add pasta and shrimp to the sauce. Toss everything together and serve warm.

Notes

For extra spice, add a pinch of red pepper flakes or a dash of hot sauce to the cream sauce.
