This Cajun Shrimp Pasta combines bold Cajun-spiced shrimp with a rich, creamy garlic Parmesan sauce and tender pasta. It's the perfect spicy and comforting dish for a cozy night in.
Cook pasta in a large pot of salted water according to package instructions. Drain and set aside.
Toss shrimp with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook 2–3 minutes per side until pink. Remove and set aside.
In the same skillet, add garlic (and bell peppers if using). Sauté for 1–2 minutes. Pour in heavy cream and bring to a simmer.
Stir in Parmesan cheese until melted. Season with salt and pepper. Add spinach and cook until wilted.
Add pasta and shrimp to the sauce. Toss everything together and serve warm.
