Ingredients
  

Crème Brûlée Base

  • 2 cups heavy cream
  • 1 tsp vanilla extract
  • 4 large egg yolks
  • 1/2 cup granulated sugar plus extra for topping

Instructions
 

  • Preheat the oven to 325°F (163°C). Place the ramekins in a baking dish.
  • In a saucepan, heat the cream and vanilla until steaming, but not boiling.
  • In a separate bowl, whisk the egg yolks and sugar together until pale.
  • Slowly pour the warm cream into the egg mixture, whisking continuously.
  • Strain the mixture and divide it among the ramekins. Fill the baking dish with hot water halfway up the sides of the ramekins.
  • Bake for 30 minutes or until the edges are set but the center is slightly jiggly.
  • Cool completely, then refrigerate for at least 2 hours.
  • Before serving, sprinkle sugar over each custard and caramelize it with a torch until golden and crisp.

Notes

Crème brûlée pairs well with fresh berries, coffee, or a splash of liqueur like Grand Marnier.
