Ingredients
  

  • 1 can salmon (drained and flaked)
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 cup finely chopped onion
  • 1 tbsp fresh parsley (chopped)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (for frying)

Instructions
 

  • In a bowl, combine salmon, panko breadcrumbs, egg, mayonnaise, mustard, onion, parsley, salt, and pepper.
  • Mix until just combined, being careful not to overwork the mixture.
  • Form the mixture into four equal-sized patties.
  • Heat olive oil in a frying pan over medium heat.
  • Cook patties for 3-4 minutes on each side until golden brown and cooked through.
  • Drain on paper towels and serve warm with your favorite sauce.

Notes

For firmer patties, refrigerate the mixture for 15 minutes before shaping.
