In a mixing bowl, combine the drained salmon, breadcrumbs, beaten eggs, chopped onion, lemon juice, salt, and pepper.
Use a fork to mash the mixture together until well combined. The mixture should hold its shape when pressed.
Form the mixture into evenly sized patties, about 1/2 inch thick.
Heat cooking oil in a skillet over medium heat.
Fry the patties for 3-4 minutes per side or until golden brown and crispy.
Transfer to a paper towel-lined plate to drain excess oil.
Serve warm with your favorite sides or dipping sauce.

For a healthier version, bake the patties at 375°F (190°C) for 15-20 minutes, flipping halfway through. Serve with mashed potatoes, rice, or coleslaw for a complete meal.
